Gluten-Free Vegan Crumpets

Warburton's recipe adapted for people with gluten intolerances and on a plant-based diet

INGREDIENTS

150grams of White Wings gluten free flour

200ml water (room temperature) + 1 tablespoon (warm water)

1/2 teaspoon salt

1/2 teaspoon sugar

1 teaspoon baking powder

1 teaspoon instant yeast

1 - 2 tablespoon vegan olive oil butter

stainless steel egg ring


DIRECTIONS

  1. Mix the warm water and yeast in a small bowl and let it sit for 15 minutes

  2. Mix the gluten free flour, water and salt with an electric mixer for 1 minute to combine ingredients in a mixing bowl

  3. Add sugar, baking powder and yeast mixture and mix on medium-high for 2 minutes till the mixture is fully combined

  4. cover mixing bowl with a tea towel and keep it in a warm dry place for 15 minutes

  5. heat vegan olive oil butter in a fry pan on low-medium heat and place the stainless steel egg ring in the center. drop a ladle of the mixture into the ring. As the crumpets slowly cook it will begin to bubble. Remove the ring when it has almost cooked all the way to the top of the crumpets and turn the crumpets over to fully cook the top.

  6. Should make 6 crumpets. Serve with vegemite or a jam of your choice.
