Thai Stuffed Omelet

Mince pork parcels wrapped in a paper thin omelet

As a kid I loved coming home to eat these stuffed omelets with rice as an after school snack


INGREDIENTS

250grams minced pork

50grams finely diced onions

50grams diced tomatoes

40grams finely diced carrots

10grams chopped coriander

5 eggs

1 ½ teaspoon light soy sauce

Pinch of brown sugar (1/8 teaspoon)

1 teaspoon cornflour

2 tablespoon cold water

1-2 tablespoon vegetable oil

Pinch of salt & pepper

A drop of fish sauce



DIRECTIONS

1. Marinate the minced pork with soy sauce, salt, pepper, and brown sugar

2. While the pork marinates, lightly beat 5 eggs and add 1-2 drops of fish sauce to flavor

3. Heat 1 tablespoon of oil on low-medium heat in a large wok, when hot add 1/3 egg mixture to make very thin omelets. Make 3 omelets. Place them on a plate or chopping board when done to cool.

4. Heat the remaining 1 tablespoon of oil on medium to high heat in the same wok. When hot add the onions and stir fry till translucent, then add the carrots. (carrots and onions should be the same size when diced)

5. Cook for 2 minutes till carrots soften, then add the pork

6. Once the pork if fully cooked, add the tomatoes and stir fry for another 1 minute

7. Mix the cornflour and cold water together and add it to the minced pork. This will help bind the mixture together.

8. Add the coriander, stir through and turn off the heat.

9. Divide the pork mixture into three and add it to the center of each egg omelet and wrap into a square parcel
